Course Overview:

Sorghum is growing in popularity as a nutritious, gluten-free grain. This three-day course will provide participants with a look at the nutritional benefits of sorghum and the wide variety of ways it can be added into new food products. In the NCI food labs, we will experiment with breakfast cereal, baked goods, snack foods, sorghum-based milks, and even pasta! This course is designed specifically for start-up and established companies interested in establishing new products or incorporating sorghum as an ingredient in existing products.

Objectives:

  • Learn about sorghum nutritional values
  • Understand sorghum flour functionality
  • Explore inclusion rates of sorghum flour in different products
  • Learn how to select the right sorghum variety for the right product

  1. Sorghum nutritional profile.
  2. Finding the right flour for your product.
  3. Experiment with different inclusion rates.
  4. Extrusion, baking, and pasta making demonstrations.
  5. Stone milling demonstration.
  6. Network with sorghum experts and providers.

Important Note

Included in the registration fee are course materials, lunches and refreshments during the course, and one evening dinner banquet.

Airfare, hotel rooms and other meals are not included.

Hotel Information:

NCI will reserve hotel rooms for all participants at the various locations during the course. After registering, an email will be sent to you with more information. Hotel rooms costs are not included in the course registration fee.

Transportation:

Transportation between the airports and hotels will be arranged by NCI, with more information provided prior to the start of the course.

NCI will provide daily transportation during the course.

Cancellation Policies:

Requests to cancel a registration must be received on or before February 23, 2024 to receive a full refund. Requests to cancel a registration after that date will receive credit for a future NCI course that is good for 1 year. If NCI is forced to cancel this course, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.
